Almonds can be eaten fresh, blanched, roasted, candied, or used as ingredients in other foods. They are technically not nuts, but are edible seeds, or drupes - a fruit with a single stone or pit, surrounded by a husk. Blanched almonds are briefly boiled and then shocked in cold water to stop the cooking, enabling the skins to be easily removed.
Vegetable oil is used as an ingredient in food, and may be extracted from any vegetable source, such as beans, seeds or nuts. Common sources are corn, canola, cottonseed, soybean, coconut, sunflower, palm and palm kernel.
