Filtered water has been passed through filters to remove most additives and impurities. Water is sufficient to reconstitute when it is added to return the concentrated fruit or vegetable juice to the strength found in the raw fruit or vegetable ingredient(s).
Ascorbic acid, or vitamin C, may prevent color changes in food, and is an antioxidant vitamin that is essential for human health. It is sometimes added to bread dough to improve texture, nourish the yeast, or make the dough easier to handle.
