Sugar, or sucrose, provides sweetness and texture to foods, and is made by evaporating water from the syrup of sugar cane or sugar beets until sugar crystals form. Sugar may be granulated, or very finely ground into powder when a finer texture is desired.
Chocolate, or chocolate liquor, provides flavor and texture to a variety of foods, and is made from the fermented, dried and roasted seeds of the cacao tree. Chocolate liquor alone is bitter and is often combined with sugar and other ingredients to create different types including semisweet, dark and milk chocolate.
